Although the traditional staple of Xi’an is wheat, Yangtze River Valley and Islamic influences have introduced rice, mutton and other cuisines to the region. Specialties: Mutton soup with pancakes, pancake sandwiches with stewed meat, Liangpi (steamed cold noodles made of rice and flour paste) and Qishan Noodles served with a special sauce.
